FUNNEL CAKES 
1 egg
2/3 c. milk
2 tbsp. sugar
1 1/3 c. sifted flour
3/4 tsp. baking powder
1/4 tsp. salt
Confectioners' sugar
Vegetable oil for deep frying

Beat egg. Add milk. In separate bowl, sift together salt, sugar, flour and baking powder. Add egg and milk. Beat until smooth. Heat 1 inch of oil to 375 degrees in heavy-bottomed skillet.

Pour batter into a funnel with about 1/2 inch hole. Hold finger over bottom tip to prevent batter from running out. Hold funnel over oil and allow batter to flow out of funnel into hot oil. Funnel cakes can be made small or the size of the skillet. Fry until golden on underside about 1 1/2 to 2 minutes. With large spatula or tongs, flip over, brown other side.
