HUMMINGBIRD CAKE 
3 c. sifted flour
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 eggs, beaten
1 1/2 c. oil
1 tbsp. vanilla
1 sm. can crushed pineapple, not drained
2 lg. bananas, chopped or mashed
1 c. chopped pecans
1/2 c. coconut

Combine dry ingredients in bowl. Add eggs and oil; stir until moistened, but do not beat. Stir in vanilla, pineapple, coconut, pecans and bananas. Spoon into 3 greased and floured 9" pans and bake at 350 degrees about 45 minutes.

FROSTING:

2 (8 oz.) pkgs. cream cheese, softened
1 c. butter, softened
2 lbs. powdered sugar
2 tsp. vanilla

Stir all together and ice layers, sides and top. Makes lots of frosting. Sprinkle nuts on top or mix with frosting.
