NO CHOLESTEROL OAT BRAN MUFFINS | |
1 tbsp. cholesterol free butter 1/2 c. sugar 2 egg whites, beaten 1 tbsp. sour milk 1 tsp. baking soda 3/4 c. pineapple juice 2 c. oat bran cereal (uncooked) 1/2 c. dates, chopped 1/2 c. raisins 1 chopped apple 1/2 tsp. cinnamon 3 slices pineapple If you don't have sour milk, put 1 teaspoon vinegar in 1 tablespoon milk. Beat all ingredients together. Bake at 425 degrees for 15-17 minutes. Use paper baking cups in muffin tins. Fill cups to top as they don't rise very high. |
