CHOLESTEROL FREE SUNRISE MUFFINS
RECIPE
 
1/2 c. hot water
3/4 c. raisins
2 1/4 c. all-purpose flour
3/4 c. granulated sugar
1 tbsp. baking powder
2 tsp. grated orange peel
1/8 tsp. cinnamon
1/8 tsp. nutmeg
3/4 c. Weight Watchers cholesterol free reduced calorie mayonnaise
3/4 c. frozen cholesterol free egg product, thawed
1 tsp. vanilla extract

Spray a 12 cup muffin pan (2 1/2 inch diameter) with nonstick cookbook spray. Add water to raisins; set aside to cool.

In bowl, combine flour and next 5 ingredients. Blend mayonnaise, egg product and vanilla; stir in raisins and water. Pour mayonnaise mixture into flour mixture; stir until just moistened. Fill each muffin cup with 1/3 cup batter. Bake in preheated 375 degree oven, 22-25 minutes or until muffins are golden brown. Remove from pan; serve warm.
