CHOLESTEROL FREE FRUIT LOAF | |
1 3/4 c. all purpose flour 2 tbsp. packed brown sugar 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. ground cinnamon 1/2 c. Rich's Coffee Rich 3/4 c. mashed, ripe banana 2 egg whites 3 tbsp. corn oil 3/4 c. oat bran flakes cereal 1/2 c. seedless raisins 1/2 c. chopped or snipped, pitted dates Pam cooking spray Combine flour, brown sugar, baking powder, baking soda and cinnamon in a mixing bowl. Add enough water to Coffee Rich to make 1 cup. Add to flour mixture along with bananas, egg whites and oil. Mix to blend. Fold in cereal, raisins and dates, mixing just to blend. Pour into 8 1/2" x 4 1/2" x 2 1/2" loaf pan which has been sprayed with Pam, to coat well. Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. Cool completely before slicing. Makes 1 loaf (16 serving). |
