BOSTON LETTUCE WITH GRAPES AND WALNUTS | |
2-4 sm. heads Boston or butter lettuce, washed & torn in bite-size pieces 2/3 c. walnut pieces 1/2 c. Feta cheese, crumbled (4 oz.) 1 c. seedless grapes, red or white, sliced in half 5 tbsp. walnut oil 3 tbsp. vegetable oil 2 tbsp. white wine vinegar Salt & pepper In a large salad bowl toss together lettuce, walnuts, crumbled cheese and grapes. In a small screw top jar combine oils, vinegar and freshly ground black pepper to taste. Shake well until dressing appears creamy. Drizzle dressing over salad and toss just before serving. 4-6 servings. |
