BAKED SCALLOPS A LA RITZ 
3/4 lb. scallops
1/4 c. melted butter
24 Ritz crackers, crushed
Salt and pepper to taste
1/8 c. dry vermouth

1. Rinse and drain scallops (halve sea scallops). Remove muscle. Grease a shallow baking dish, approximately 4 x 10 inches, with small amount of butter. Sprinkle layer of crumbs on bottom of baking dish. Then layer scallops, crumbs, etc., finishing with crumbs on top. This part can be done slightly ahead and refrigerated briefly.

2. Combine wine, melted butter, salt and pepper and pour over top of casserole just before placing in oven. (DO NOT pour over casserole ahead of time.)

3. Bake in preheated oven at 375 degrees for 20 minutes uncovered. Serves 2.
