EASY BAKED SCALLOPS 
1 lb. sea scallops
1 sleeve Ritz crackers
1 stick butter
Lemon juice to taste

Rinse scallops and put in round cake pan. Crush Ritz crackers and sprinkle on top. Melt butter and pour over crackers and scallops. Bake for 25 minutes at 300 degrees.

What I love out this recipe is its simplicity!!! Restaurant delicious, but simple and quick. Whenever I buy sea scallops, (on sale of course), I use this and get raves! I add paprika and salt and pepper and a bit more lemon. Sometimes lemon-pepper as well. Or old bay seasoning.
