1/2 c. butter 1 tbsp. vanilla 1 1/2 c. creamy peanut butter 1 lb. confectioners sugar 1 1/4 c. semi-sweet chocolate chips 1/4 c. vegetable oil Melt butter in large pan. Remove from heat. Stir in vanilla and peanut butter. Gradually add sugar, using low speed of electric mixer. Mixture will be slightly crumbly. Roll into 1 inch balls, and place on waxed paper. In top of double boiler over low heat, melt chocolate chips and oil. Keep melted chocolate over hot water while dipping. Using a toothpick, dip a peanut butter ball into the chocolate, leaving a dime sized area undipped. Place on waxed paper until dry. Makes 4-5 dozen. |
