GRILLED FLANK STEAK 
2-3 lb. flank steak
1 garlic clove, cut in half
1/2-3/4 c. soy sauce, divided
2 tsp. dry mustard
2 tsp. brown sugar

Rub garlic into steak on both sides. Let stand 10 minutes. Moisten surface of steak with soy sauce; pat in mixture of dry mustard and brown sugar. Put in a large Zip-Loc bag. aDd enough soy sauce to partially cover meat. Marinate 2-3 hours, turning bag occasionally.

Let steak stand at room temperature for 30 minutes. Grill on very hot grill. Sear on each side. Then cook 3-4 minutes each side for medium. Slice diagonally against the grain. Yield: 4-6 servings.
