BANANA CAKE 
2/3 c. butter
2 1/2 c. sifted cake flour (must cake flour)
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 1/2 c. mashed bananas
2/3 c. buttermilk
2 eggs
2/3 c. chopped walnuts

Soften butter; sift dry ingredients. Add bananas and half buttermilk to dry ingredients. Mix until damp. Beat 2 minutes. Add rest of milk and eggs; beat 2 minutes. Fold in nuts. Pour into greased 13x9 cake pan. Bake at 350 degrees for 35-45 minutes.

FROSTING:

1 lb. powdered sugar
1/4 c. butter
2 tsp. vanilla
3-4 tbsp. milk

Beat until smooth.

I used a banana frosting I found on here...1/4 cup softened butter, 2 tsp. vanilla, 1/3 cup mashed banana, 1/4 tsp. salt, 3 cups confectionery sugar, 1-2 drops yellow food coloring (opt.) Mix butter, salt, vanilla & about 1/3 of the confectionery sugar. Add banana & rest of confectionery sugar alternately, mixing until smooth & creamy. You can add more confectionery sugar to thicken or add more banana to thin it out. Refrigerate cake...icing will set after it has been chilled. ENJOY!!!!
