GREEK SALAD 
1/2 head lettuce, shredded
1 med. size cucumber, sliced and quartered
Radishes, sliced & cut in half
1 onion or 3 scallions, sliced
2 stalks celery, sliced
1/2 of 8 oz. jar herring in wine sauce, juice and all
1 tbsp. oil
1 or 2 tomatoes, cut into eighths
Black olives, pitted
Green olives with pimento
Vinegar, a little if desired

Toss all ingredients and refrigerate at least 2 hours before serving. Note: The ingredients can vary according to your taste. 4 servings are 112 calories each.
