IRISH SODA BREAD 
2 1/2 c. whole wheat flour
1 1/2 c. all purpose flour
2 tbsp. sugar
1 tbsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 qt. round casserole, greased
6 tbsp. butter
1 c. raisins
1/4 c. walnuts
2 eggs
1 1/2 c. buttermilk or 1 tbsp. lemon juice per cup of reg. milk

In large bowl mix first 6 ingredients. Cut in butter. Stir in raisins. Beat eggs. Remove 1 tablespoon. Add remainder to dry mixture. Flour surface. Knead 10 times. Put in casserole. Cut 1/4 inch deep X in top. Brush top with remaining egg. Bake at 350 degrees for 60 to 70 minutes.
