WHITE FRUIT CAKE OR CHRISTMAS
CAKE
 
3/4 lb. butter
1 lb. confectioners' sugar
7 eggs (one at a time)
1/2 lb. white raisins
4 c. sifted flour
No baking powder
1/2 lb. red candied pineapple
1/2 lb. green candied pineapple
1/2 lb. red candied cherries
1/2 lb. green candied cherries
1 c. chopped walnut meats

Cream sugar and butter slowly until well blended. Then add eggs, one at a time. Blend well. Add gradually the flour and reserve 1/2 cup for fruit mixture which has been soaked with 1 shot or more of rum, if desired. Add fruit mixture and nuts last and put into well greased and floured loaf pans. Bake in 250 degree oven for 2 hours or until done.

Cool and wrap in aluminum foil and store. These can be made well in advance for Christmas.
