FRESH SPINACH SALAD 
1/2 lb. bacon
1 1/2 tbsp. bacon grease
1/2 c. vinegar
1/2 to 3/4 c. sugar
1/2 tsp. salt
1 beaten egg
1 lb. fresh spinach
Croutons
Tomatoes
Onions, cut in rings

Fry and drain bacon. Break into small pieces. Combine grease, vinegar, sugar, salt, egg, bacon pieces. Cook over low heat until thick. Can be served hot or cold. Wash and dry spinach. Add croutons, tomatoes, onions and toss with dressing.
