OATMEAL CARROT COOKIES 
3/4 c. butter
1 3/4 c. all-purpose flour
3/4 c. packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. cloves
1 tsp. vanilla
2 c. rolled oats
1 c. finely shredded carrots

In a mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds or until softened. Add about half of the flour, brown sugar, sugar, egg, baking powder, cinnamon, baking soda, cloves and vanilla. Beat until combined, scraping sides of bowl occasionally.

Beat or stir in remaining flour. Stir in oats, carrots and 1/2 cup raisins, if desired. Drop dough by tsp. 2 inches apart on ungreased cookie sheet. Bake at 375 degrees for 10-12 minutes. Cool on wire rack. Makes about 4 dozen cookies.
