NORTH DAKOTA CURRIED RICE SALAD 
1 c. brown rice
2 1/2 c. water
2 chicken bouillon cubes
1/2 green pepper
4 green onions with tops
1/2 c. water chestnuts
3/4 c. ripe olives
6 oz. jar marinated artichokes (save a little of marinade)
3/4 c. mayonnaise
1 tsp. curry powder
Cashews

Boil rice, water and bouillon cube according to directions. Chop green pepper, green onions, water chestnuts, ripe olives and artichokes.

Combine mayonnaise, curry powder and a little marinade. Mix everything together. Chill. Serve on greens with cashews sprinkled on top.
