GREEN TOMATO CRISPS | |
7 lb. small firm green tomatoes 2 gal. lime water (3 c. hydrated lime to 2 gal. of water) 4 lb. sugar 3 pt. vinegar 1 tsp. cloves 1 tsp. ginger 1 tsp. celery seed 1 tsp. mace 1 tsp. cinnamon Slice tomatoes 3/16-inch thick. Soak in lime water for 24 hours. Drain and soak for 4 hours in clear water. Change water every hour. In draining and changing the water, extreme care must be exercised to keep from breaking as they are very brittle. I suggest letting the water run gently from the faucet on each piece to get rid of the lime. This takes time, but the pickles are nicer. Make syrup of sugar, vinegar, cloves, ginger, celery seed, mace and cinnamon. Bring to boil; pour over tomatoes. Let stand overnight. Next day, boil for 1 hour. Seal in jars. |
