CARROTS AND APPLE 
1 lg. onion, sliced
3 tbsp. butter
6 med. carrots, peeled and diagonally sliced
2 tbsp. maple syrup
1/2 tsp. salt
2 unpeeled tart apples

Cook onion in butter until tender, not brown. Add carrots, syrup and salt. Cover and cook over low heat for 15 minutes. Cut apples in wedges. Add to carrots, cover and simmer until carrots are tender (about 15 minutes more). Stir occasionally.
