BURRITO PIE 
5 (10 inch) flour tortillas
8 oz. can refried beans
8 oz. grated Cheddar cheese
8 oz. Ricotta cheese
2 tbsp. chopped jalapeno peppers
3/4 c. salsa
12 oz. cooked ground meat
1/2 c. taco sauce
1 c. sour cream for garnish

Preheat oven to 350. Assemble the pie on a sheet pan. On the first tortilla, spread half the refried beans and sprinkle on half of the grated Cheddar. Top with the second tortilla and spread with Ricotta cheese, jalapenos, and half of the salsa. Add the third tortilla and spread with the ground meat and remaining salsa. Add fourth tortilla and spread with the remaining refried beans and the remaining Cheddar. Top with the fifth tortilla and taco sauce. Bake for 15 to 20 minutes. Heat thoroughly. Cut into six pie-shaped wedges. Serve with a dollop of sour cream on top. Serves 6.
