CHEESE ENCHILADAS 
12 flour tortillas
Grated cheddar cheese
1 med. onion, chopped
3 tbsp. oil
2 1/2 tbsp. flour
1/2 tsp. salt
2 tbsp. chili powder
1 qt. tomato juice

Mix flour, salt and chili powder. Heat oil in skillet and add flour mixture, then add juice. Cook until thick. Dip tortillas in sauce. Place on wax paper. Place grated onion and grated cheese in middle. Then roll up. Place on another piece of wax paper and place in refrigerator. After chilled, fry in small amount of oil or in nonstick teflon skillet. Fry until heated through.
