BEEF AND CHEESE ENCHILADAS 
Brown in skillet: 1 pound ground meat and drain.

Grate 10 ounce Cheddar cheese.

Chop 1 onion, saute with beef.

Place 2 tablespoons of meat in a flour tortilla. Sprinkle with cheese and onions. Roll up tight and place in a slightly greased 13x9x2 inch baking dish, seam side down. Cover with sauce.

SAUCE:

Melt in pan:

1/2 c. butter

Add:

3 tbsp. flour

Gradually add:

2 c. milk

Cook until slightly thick:

8 oz. Velveeta

Add:

1 can chopped chilies

Pour over filled tortillas. Cover with grated cheese. Cover with foil. Bake 350 degrees for 15 minutes. This may be frozen before it is baked.
