BANANA BREAD 
1 3/4 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. mashed ripe banana
1 tbsp. lemon juice
3/4 c. sugar
1/3 c. butter
2 eggs
1/3 c. milk
1/2 c. coarsely chopped walnuts

1. Lightly grease bottom only of loaf dish, 9 x 5 inches. Combine in medium mixing bowl flour, baking powder, baking soda and salt. Set aside. Mix mashed banana and lemon juice. Set aside.

2. Beat sugar and butter in a large bowl until light and fluffy. Add eggs, one at a time, beating well after each. Alternately stir in milk and dry ingredients. Fold in walnuts and banana mixture. Pour batter into loaf dish. Cover ends of loaf with 2 inch strips of aluminum foil and mold to fit around handles. Place loaf dish on inverted saucer in oven.

3. Microwave at medium-high (70%) 8-10 minutes. If using oven other than Sharp Carousel, rotate loaf dish quarter turn 2 or 3 times. Increase power to high (100%). Microwave until no cooked batter can be seen through bottom of dish and wooden pick inserted in center comes out clean, 1-2 minutes. Cool on countertop 10 minutes. Remove from loaf dish. Makes 1 loaf.

Since microwave ovens vary in power, you may need to adjust your cooking time.
