BANANA NUT BREAD 
1/2 c. vegetable shortening
3/4 c. sugar
1 lg. egg
3 tsp. lemon juice
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 to 3 bananas, mashed (1 c.), add some coffee and let soak
1/2 c. walnuts, chopped

Cream shortening and sugar until smooth and well blended. Beat in egg and lemon juice. Sift together flour, baking soda and salt. Fold the mixture into the batter and blend well. Stir in mashed bananas and walnuts. Pour into a 9x4x3 inch loaf pan and bake 60 to 70 minutes. Test center to see if done. Turn out on rack to cool. Makes 1 loaf.
