BANANA NUT BREAD 
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/3 c. butter
2/3 c. sugar
2 eggs
2 tbsp. lemon juice
1 c. mashed bananas (very ripe are best)
1/2 c. nuts

Sift dry ingredients together. Cream butter and sugar, add eggs and beat until light and fluffy. Mash bananas with lemon juice. Blend all ingredients until smooth. Turn into greased 9 x 5 inch loaf pan. Bake at 350 degrees for 1 hour or until done. Cool overnight before slicing. I often double the recipe - it freezes very well.
