APPLE OMELET 
This recipe assumes you know how to cook an omelet. (Only one at a time in a heavy 6 to 8 inch skillet).

1 lb. cooked country ham, diced
Large yellow onion, chopped
Green bell pepper, chopped
Yellow Delicious apple, diced
Several mushrooms, chopped
Sharp Cheddar cheese, grated (commercial package)
1 tbsp. butter

Saute first five items in skillet with butter. When omelet is about ready to remove from skillet. Spread small handful of cheese over upper half of omelet and top with 1/4 of saute mixture. Fold bottom half of omelet over upper half and roll onto plate. Salt and pepper to taste.
