BETH'S APPLE CAKE 
2 c. sugar (1 c. if using canned apples)
1/2 c. shortening
2 beaten eggs
4 c. peeled diced apples (may substitute 2 cans country spiced apple filling)
2 tsp. baking soda
1 1/2 c. chocolate chips
2 1/2 c. flour
1 tsp. salt
3 tsp. cinnamon
1 tsp. nutmeg
1 c. nuts

Well grease and flour baking pans, cream together shortening and sugar. Gradually blend in beaten eggs. Gradually blend in apples. Sift together spices and flour and gradually blend into mixture. Fill pans 1/2 full of batter and bake at 350 degrees for 40 to 45 minutes. (Smaller pans will require less cooking time).

SAUCE:

2/3 c. brown sugar
2/3 c. light corn syrup
1 tsp. vanilla
1/2 c. butter
2/3 c. sour cream

In small sauce pan, melt butter and blend in brown sugar, blend well with a whip. Add syrup, blend, add sour cream and whip until creamy, add vanilla and serve warm over warm cake.

This comes from a 99 year old woman who is a native of the Colorado Rockies and still lives high up in the mountains.
