PRIZE WINNING PINEAPPLE BRAN
MUFFINS
 
1/2 c. crushed pineapple in syrup
1/2 c. orange juice
1 1/4 c. whole bran cereal
2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. baking powder
1/2 c. sugar
1 egg
2 tbsp. vegetable oil

Preheat oven to 400 degrees. Drain pineapple and retain syrup. Put bran in bowl and pour 2/3 cup pineapple syrup and orange juice over cereal - add more orange juice if necessary.

Sift flour, soda, salt, baking powder and sugar together. Stir 1/2 cup crushed pineapple, egg and oil into bran mixture. Fold in flour mixture. Stir until moistened. Spoon into greased muffin tins. Makes 12. Bake 15-20 minutes.
