EASY AMERICAN DUCK SKILLET 
1 (4-5 lb.) duckling
1 c. maple syrup
2 apples
4 strips bacon
Salt & pepper to taste

Wash and clean duckling. Place iron skillet on fire and heat until very hot. Place 1 cut up apple inside duckling and tie legs together. Rub duckling with salt and pepper and place in skillet. Turn duckling until it is blackened evenly. Remove from flame, and stand duckling with legs up in skillet. Place skillet with duckling in 400 degree oven for 1 hour and 20 minutes. When duckling is cooked, remove from pan and cut in half. Remove apples and rib bones. Place skin side up on cookie sheet with 2 strips of bacon on each half of duckling. Return to oven. When bacon is cooked, place duckling on warm serving platter. Top with fresh sliced apple and heated maple syrup. Serve with rice.
