MICROWAVE STUFFED ZUCCHINI 
3 zucchini, 1 1/2 lb.
2 tbsp. oil
1/4 c. chopped onion
1 clove minced garlic
6 tbsp. chopped green pepper
1 tsp. oregano
1/2 lb. ground veal
1/4 c. sunflower seed
1 egg
1/2 c. bread crumbs
2 tbsp. Parmesan cheese
Tomato sauce

Split zucchini lengthwise. Scoop out center flesh, leaving shell about 1/2 inch thick. Cook shells in microwave on HIGH for 7-9 minutes, covered. Let stand 5 minutes. Drain well.

In oil cook onion, garlic, green pepper and zucchini pulp for 3 minutes. Add salt and pepper and oregano. Cool slightly. Stir in veal, nuts, egg and most of bread crumbs. Stuff squash with mixture.

Blend remaining bread crumbs and cheese. Sprinkle over zucchini. Cook uncovered for 9 minutes on HIGH. Serve with sauce and buttered noodles.

Since microwave ovens vary in power, you may need to adjust your cooking time.
