BLUEBERRY OAT MUFFINS | |
1 c. rolled oats 1 c. buttermilk 1 c. flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 c. brown sugar, packed 1 egg, beaten 1/4 c. oil or melted shortening 1 c. blueberries Combine oats and buttermilk and set aside. Combine and stir to blend flour, baking powder, soda, salt and brown sugar. Mix beaten eggs, oil, oats and buttermilk mixture together. Combine with dry ingredients, stirring gently. Fold in blueberries. Place in greased muffin pans and bake at 400 degrees for 15-20 minutes or until lightly browned. Yield 12 muffins. |
