ITALIAN VEGETABLE MEDLEY
(Microwave)
 
2 c. zucchini, sliced 1/4 inch thick
1 sm. onion, thinly sliced and separated into rings
1 tbsp. butter
1 tbsp. parsley
1 tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. dried basil
1 c. cherry tomatoes, halved

In 1 1/2 quart casserole, combine zucchini, onion, butter, parsley, lemon juice, salt and basil. Cover and cook at High for 5 minutes until zucchini is almost done. Add cherry tomatoes. Cover and cook at High for 1 minute or until heated through. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
