MICROWAVE VEGETABLES 
1 sm. zucchini
1 stalk celery
1 sm. green pepper, halved and seeded
1 green onion
1 tomato
1 c. shredded lettuce
1 tbsp. salad oil
1 1/2 tsp. soy sauce

Cut zucchini and celery in thin diagonal slices and pepper into thin strips. Thinly slice green onions. Cut tomato into wedges. Place all vegetables except lettuce into 1-quart bowl. Sprinkle with oil and soy sauce.

Cover dish with wax paper and cook at high setting 3 minutes. Remove wax paper and stir in lettuce. Cover again with wax paper and cook at high for 1 minute. Let stand 2 minutes.

NOTE: This recipe may be stir-fried in a frying pan or wok for 3 to 5 minutes if a microwave oven is unavailable.

Since microwave ovens vary in power, you may need to adjust your cooking time.
