PEA SALAD 
1/3 c. mayonnaise
1 tsp. brown or Dijon mustard
2 tbsp. chopped onion
1 tsp. chopped capers
1/2 tsp. tarragon
1 tbsp. parsley
Pepper to taste
1 c. frozen peas, thawed

Combine mayonnaise and mustard, beating until smooth. Add onion, capers, tarragon, parsley and pepper. Stir to mix. Add the peas, mixing well. Makes 4 servings to be eaten immediately or chilled.
