PEANUT BUTTER MUFFINS 
1 3/4 c. flour
2 1/2 tsp. baking powder
2 tbsp. sugar
3/4 tsp. salt
2 tbsp. wheat germ
1/4 c. soft shortening
1/4 c. peanut butter
1 egg, beaten
3/4 c. milk
Preserves

Put the first 5 ingredients in a bowl; mix. Cut in shortening and peanut butter. Mix egg and milk and add all at once to first mixture. Stir only until ingredients are dampened. Spoon into greased muffin pan, filling 2/3 full. Put 1/2 teaspoon preserves in center of each. Bake at 400 degrees for 25 minutes. Makes 10.
