PEANUT BUTTER MUFFINS | |
1/4 c. peanut butter 1/2 c. sugar 1 egg, slightly beaten 2 c. flour 1 tsp. salt 3 tsp. baking powder 2/3 c. milk 3 tbsp. melted butter or other shortening Sift dry ingredients together. Blend peanut butter with the sugar and add the egg. Mix milk and shortening (melted) together. Add dry ingredients and liquid alternately to the peanut butter mixture. Mix to blend. Fill well-greased muffin pans 2/3 full. Bake at 400 degrees for 25 to 30 minutes. |
