BAHAMAS DOVE | |
12 dove breasts, cut in bite-sized pieces 1 cup red wine 3 tbsp. soy sauce 1 clove garlic 1/4 tsp. ginger 1/2 cup vinegar 1/3 cup packed brown sugar 1 medium bell pepper 1 can pineapple chunks and juice 3 tbsp. oil all-purpose flour Marinate dove at least 2 hours in wine. Roll marinated dove in flour; brown in oil. Mix soy sauce, ginger, vinegar and brown sugar; heat. Add garlic, pineapple and pepper to dove. Heat to boiling; add sugar mixture to dove. Simmer about 45 minutes. Serve with steamed rice. |
