CHEESEBURGER PIE | |
1/4 c. olive oil 1 lb. frozen hash browns 1/2 tsp. salt 1/2 tsp. oregano 1/8 tsp. pepper 4 oz. shredded cheddar cheese 1 egg, lightly beaten 1 tbsp. green pepper 1/3 c. chopped onion 1 lb. ground beef 1 tbsp. water 1 tbsp. flour 1 (8 oz.) can tomato sauce 1/2 tsp. salt 1/3 tsp. pepper 2 tbsp. imitation bacon bits Preheat oven to 400 degrees. Heat 1/4 cup oil in skillet; add potatoes and cook, stirring occasionally, until tender and lightly browned. Remove from heat. Stir in salt, oregano, pepper and 1/4 cup cheese. Cook about 3 minutes. Stir in egg. Press mixture into 9 inch pie pan to form a skillet. Bake at 400 degrees for 15 minutes. Meanwhile, heat 1 tablespoon olive oil in skillet; add onion and green pepper and cook until onion is transparent. Add ground beef and cook until browned. Mix flour and water; add to meat with tomato sauce, salt, and pepper. Cook and stir until thickened. Fill hot potato shell with meat mixture. Sprinkle remaining cheese over top. Sprinkle top with bacon bits. Return to oven until cheese melts, about 2 minutes. Remove from oven and allow to set for 2-3 minutes. This can be doubled to fit in a 9 x 13 inch pan and serve 7-8. |
