JIFFY SPANISH RICE 
1 lb. ground beef
1 c. minute rice
1 (1 lb. 12 oz.) can tomatoes, cut up
1 tbsp. minced onion
1-2 tbsp. chili powder
2 tsp. salt
1/8 tsp. pepper

In 3 quart casserole crumble beef. Microwave on high for 5 to 6 minutes. Stir after 3 minutes. Drain. Add rice, tomatoes, onion, chili powder, salt and pepper. Cover and microwave on high for 8 to 11 minutes. Stir after 4 minutes. Let stand, covered, about 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
