CARROT CHEESE SUPREME 
1 lb. carrots, cleaned
1 1/2 c. cheese, cubed (American or Velveeta)
1 full quarter butter
Regular crackers

In double boiler, cook carrots, then thoroughly cool. Melt butter and cheese in double boiler until melted. Combine carrots with cheese and butter and place in 1 1/2-quart casserole dish. Cover with cracker crumbs and bake at 350 degrees for 35 minutes.
