CARROT MASHED POTATOES 
2 med. carrots
5 med. potatoes
butter
Milk
Velveeta cheese, cubed
Salt & pepper to taste

Boil carrots and potatoes together until soft for mashing. Drain, mash together. Add butter and milk. Whip until smooth, add cheese while whipping. You can add as much cheese as your family likes. Serves 6 to 8. Can be prepared ahead and heated in oven or microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
