MANDARIN ORANGE SALAD 
1 c. canned, drained, sliced beets
1 c. canned, drained mandarin oranges
1 c. canned, drained, pitted, black olives
1 head cauliflower, chopped into bite size pieces
1 sm. purple onion, chopped
1 head lettuce
1/2 tsp. sugar

Chop rinse, and spin-dry your lettuce (if you have one). Chop olives in half and cut the beets up smaller. Toss everything together.

Use whichever type of "Italian Dressing" you prefer. Pour about 1/2 cup of dressing into a bowl. Add the sugar. Stir until sugar is dissolved, then pour over salad and toss. Goes great with pasta dishes!
