MANDARIN ORANGE SALAD 
1/2 to 3/4 head lettuce, shredded
4 green onions and tops, chopped
1 can mandarin oranges, drained
1/2 c. caramelized pecans
1 tbsp. parsley flakes
2 tbsp. sugar

DRESSING:

1/2 tsp. salt
2 tbsp. sugar
2-3 tbsp. oil
1/2 tsp. pepper

Caramelize the pecans by adding the 2 tablespoons of sugar to pecans and stir over low heat until the sugar melts and collects on pecans. Combine dressing ingredients in a jar; shake well.

Prepare lettuce, onions, and parsley and store in refrigerator until ready to use. Add dressing, oranges, and pecans just before serving.
