SWEET-SOUR COLE SLAW 
1 1/2 lb. shredded cabbage
1 med. carrot, shredded
1 med. onion, finely chopped
1/2 tsp. caraway seed
2/3 c. vinegar
1/2 c. sugar
1/3 c. oil
Salt and pepper to taste

Mix cabbage, carrot, onion and caraway seed in a large bowl. Sprinkle with salt and pepper. Combine vinegar, sugar and oil; pour over cabbage mixture. Mix thoroughly. Chill. Marinate for several hours. NOTE: Longer marination improves flavor. This slaw will keep for 1 week, if tightly covered.
