SPECIAL OCCASION EGGS 
9 eggs
12 slices bread
3 c. milk
Salt and pepper
1/2 tsp. dry mustard
1 1/2 c. shredded cheddar cheese
1 1/2 lbs. bulk pork sausage
Green pepper, optional
Mushrooms, I use canned

Prepare the night before. Brown 1 1/2 lbs. bulk pork sausage. Throw in some green pepper and mushrooms, if you like. Drain. In a bowl, beat eggs and milk, add salt and pepper. Tear bread slices in small pieces. Mix everything together.

Place all in a 9 x 13 baking dish the night before. Cover with foil and refrigerate. Take out of refrigerator 1 hour before baking. Bake 45 minutes at 325 degrees. Let set before cutting. Enjoy!
