ITALIAN ENDIVE SOUP 
1-1 1/2 lb. chicken
1 lg. onion
Salt & pepper
Parsley
1/2 lb. escarole (Endive)
Chicken bouillon

MEATBALLS:

1/2 lb. hamburger
1/4 c. milk
Bread crumbs
1 egg
Salt & pepper
Onion powder

Boil chicken with 4 cups of water. Add first ingredients. Make meatballs tiny. Put meatballs into chicken broth. Simmer 1/2 hour. Last 15 minutes add escarole or endive. Add grated cheese.
