CAVIAR PIE ROMANOFF 
6 hard boiled eggs, chopped
2 tbsp. mayonnaise
1/2 c. chopped onion
8 oz. cream cheese, softened
2/3 c. sour cream
4 oz. Romanoff
Lumpfish caviar

Combine eggs and mayonnaise. Spread over bottom of greased 8 inch springform pan. Sprinkle with onions. Blend the cream cheese with sour cream until smooth and spread over onions. Cover and chill overnight. To remove run knife around pan sides, loosen and lift off. Spread caviar over top to edges and garnish with lemon wedges and parsley (drain juice from caviar before spreading). It's a beautiful hors d'oeuvres.

Love, love, love this recipe --but make this one small alteration. DO NOT USE 1/2 CUP OF ONIONS-- TOO MANY. I use a small amount of shallots - barely a 1/4 cup. Also use Kraft Mayo - tried Hellmann's and --so sorry-- it was not good. Also, you can spread on a plate instead of spring form pan, and it works quite well. Best appetizer ever and so easy. If you can find it, use Black Whitefish caviar by Romanoff. Tastes better but has become harder to find.
