CARROT LOAF 
1 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1/2 c. raisins
1/4 c. chopped pecans
3/4 c. brown sugar
2/3 c. corn oil
2 eggs
1/2 tsp. vanilla
1 1/2 c. grated carrots

Mix the brown sugar and oil in bowl until blended. Beat in eggs and vanilla. Add the flour, baking powder, baking soda, cinnamon, salt and carrots. Mix well. Stir in nuts and raisins. Place in greased 9 x 5 x 3 inch pan. Bake at 350 degrees for 1 hour. (May also put into 2 well-greased muffin tins. Bake at 425 degrees for 10 - 20 minutes.
