CORN FRITTERS 
1 egg
1/4 c. milk
1 c. pancake mix
1 can whole kernel corn, drained
Vegetable oil

Blend egg, milk lightly. Stir in pancake mix. Fold in corn. Drop by teaspoon into 1/2 inch oil. Cook until golden brown. About 2 or 3 minutes, turning just once. Makes 18 fritters.
