APPLESAUCE OAT BRAN MUFFINS 
2 1/4 c. oat bran
3 tbsp. brown sugar
1 tbsp. baking powder
1/2 c. frozen apple juice concentrate
3/4 c. buttermilk
2 tbsp. peanut oil
1/2 c. applesauce (try applesauce with cherries)
4 egg whites, beaten
1 tsp. salt

Preheat oven to 400 degrees. Blend buttermilk with baking powder. Allow to stand for 5 minutes. Blend in salt, peanut oil, brown sugar, apple concentrate and applesauce. Stir to mix well. Fold oat bran into applesauce mixture. Gently fold mixture into egg whites. Line the muffin pans with paper baking cups, or spray muffin cups with vegetable oil spray. Divide the mixture among 12 medium size muffin cups. Bake for 20 minutes. Allow to cool for 5 minutes before turning out.
